Kale Banana Muffins

Kale Banana Muffins ~ Gluten Free

These healthy and delicious muffins make an excellent snack for school, work and anytime.. I make the entire recipe in the Vita-mix, so the clean-up is really easy. It’s a great way to get your greens.

Ingredients:

3 large ripe bananas

5 ounces fresh kale

1/3 cup coconut oil, melted or soft

4 eggs

1 cup almond meal

1/2 cup Bob’s 1 to 1 gluten free baking flour (or the gluten free flour of your choice)

1 teaspoon baking soda

1 teaspoon lemon juice

1/4 teaspoon sea salt

lemon zest (optional)

1 cup chocolate chips (optional)

Mix banana and raw kale in a food processor until it makes a thick puree.. Mix in all the other ingredients.

Bake in muffin tins at 350 for about 25-30 minutes (when toothpick comes out clean).

Makes a little more than one dozen regular muffins or two dozen mini-muffins. Store in fridge or freezer.
